Chicken Cacciatore – Syn Free on Slimming World


There’s lots of different ways to make Chicken Cacciatore and the classic way is to add wine but even without wine and a couple of other things to keep this syn free it’s still an amazing dish.
I’m sure if you try it it will become a family favourite and chicken is my favourite type of meat so I love this version anyway.
It serves 4 people and is completely syn free on extra easy and original plans and takes about 40 minutes to make.
This is great served with pasta, rice or potatoes but I dished mine up with roast potatoes and broccoli. This is a fabulous recipe kindly donated by Jamie Davison and you can find his slimming

Serves: 4

4 chicken breats, all visible fat removed and cut in half
4 bacon rashers, all visible fat removed and cut into pieces
1 onion, peeled and chopped
2 garlic cloves, peeled and crushed
2 carrots, peeled and sliced
2 celery stalks, sliced
2 x 400g chopped tin tomatoes
300ml veg stock made with a stockpot
2 tsp dried rosemary
Salt and freshly ground black pepper

In a frying pan sprayed with Frylight
Place the chicken breast smooth side down
Season with salt and freshly ground black pepper and cook for 3-4 minuets on each side.
Take off the heat and set aside.
Meanwhile in a large pot sprayed with Frylight
Cook the bacon, onions, celery and carrots for 4-5 minutes.
Add the garlic and cook for another minute.
Add the tin tomatoes, chicken, stock and rosemary.
Bring to the boil, cover, turn down and cook on a low heat for 30 minutes.
Remove the lid and cook for another 10 minutes.

Slimming world friendly pizza


Hey guys,
Well after Vicky got the go ahead from SW that the wholemeal bread mix from Tesco can be used as a HE (well 57g worth can) here, I just had to make some pizza and rolls. The rolls were a little heavy but they certainly filled a hole and the pizza was absolutely awesome!! I used a fail proof pizza sauce recipe that you can find here.
The whole pizza came out at 7 syns as I had 2 HEB worth of base and used my HEA for the cheese, I do Extra Easy, and the base sauce recipe come out at 1 syn because I didn’t use any parmesan.

KFC – Slimming World Style


I I realise that some of you will have zero interest in ‘diet’ posts let alone slimming world and I will try to limit them but I assure you ANYONE of you will enjoy this! My entire family eats it, kids included! If you ARE following SW it’s free from what can tell but feel free to correct me in the comments as I know things change all the time. On to the recipe.. Oh and FYI I cook everything at 200.. I’m not sure my oven has another option..

know breaded chicken is just that but I never realised how easy it would be to make. It’s literally just breadcrumbs.. the chefs among you may scoff but before you make it for yourself how would you know? I used my hand blender and 3 small pieces of brown bread to make my crumbs and garlic salt, oregano, paprika and pepper to season them. I’ve made this a few times now and I have no measurements for the seasoning, the first time I thought I’d gone WAY overboard with the paprika but it still tasted great so honestly I don’t think you have to worry too much, a little of each.
To bread the chicken I dipped each piece in egg (which I’d beaten) and then onto the breadcrumbs (on a plate seemed easier but y’know.. whatever you want) and then on to a baking tray which I’d sprayed with fry light. 20 minutes in the oven (turning half way) and they’re done. Seriously yummy – even good heated up the next day but I know some people are funny about reheating chicken – I’m not.

The chips need little explanation, chopped, salted, sprayed.. 20 minutes (maybe 30.. depends how big you cut them/how many you’re cooking) and they’re crisp and delicious. I never thought they’d be as good as regular chips but they are!

I serve it with beans (and on this occasion corn) to keep the ‘KFC’ feel and there you go. All yummy and entirely guilt free. I do miss the gravy but the beans will do and honestly the chicken is so good you wont believe you made it yourself – or maybe you’re a great cook and it will come as no surprise.

Scan Bran Carrot Cake


Pete’s Scan Bran Carrot Cake
Syn free
5 scan bran
300g/3 medium size carrots
1 egg
3 Tbsp sweetener
½ tsp cinnamon
1 tsp vanilla extract
1 tsp nutmeg
Pinch salt
Zest from 1 lemon

Break the scan bran into a mixing bowl and add boiling water, a bit at a time to soften them, mash into a smooth mix.

Grate the peeled carrots, drain as much liquid out of them as possible, and then place in a towel and wring out any remaining liquid. Add to mixing bowl along with the egg, sweetener and spices & lemon zest, mix well.

Preheat the oven to 180c and prepare a loaf tin, line with greaseproof paper cut to fit, spray with fry light.

Place on the middle shelf for 30 mins, insert a metal skewer into the middle of the cake and when you pull it out and it comes out clean, the cake is done.

Remove from the tin and allow to cool on a wire rack.

Doesn’t look too good but boy! did it taste nice, moves faster that an F1 car!!

Homity Pie


Low calorie cooking spray
potatoes, peeled and cubed – 340g
onions, chopped – 225g
leeks, thinly sliced – 225g
frozen peas – 198g
garlic cloves, finely chopped – 2
A handful of fresh parsley, chopped
A handful of fresh thyme, chopped
eggs, lightly beaten – 2
vegetable stock – 85ml
reduced-fat Cheddar cheese, grated – 160g
Salt and freshly ground black pepper

Preheat your oven to 220°C/200°F/Gas 7. Spray a medium-sized, ovenproof dish with low calorie cooking spray.
Boil potatoes for 15-20 minutes, or until tender. Drain return to the pan and mash. Set aside until needed.
Spray a large non-stick frying pan with low calorie cooking spray and stir-fry the onions, leeks and peas over a medium heat for 6-8 minutes, or until the vegetables have softened.
Add the mashed potatoes, garlic, parsley, thyme eggs, stock and half the cheese, season and stir to combine.
Spoon the mixture into the prepared ovenproof dish and scatter over the remaining cheese. Bake for 20 minutes or until golden.

Amazing Overnight Oats


porridge oats – 35g
fat free natural yogurt – 200g
Mixed blueberries, strawberries and raspberries
Layer the porridge, yogurt and fruit in a jar or bowl.
Cover and put in the refrigerator overnight so the porridge absorbs all the yogurt.
In the morning stir so all the layers are mixed together and top with more fruit.

Slimming world Syn free pizza


Syn-free + 1 HEA + 1 HEB
57g wholemeal pitta bread (HEB)
1 clove garlic, cut in half (optional)
4 tablespoons passata with herbs
57g reduced fat mozzarella, or 42g mozzarella/reduced fat cheddar, grated (HEA)
Your choice of toppings e.g. ham, tomato, onion, tuna, sweetcorn, etc. (remember to count syns for any that aren’t free)

Heat the oven to 220C.
Split the pitta bread into two halves, place on a baking tray and bake in the oven for 2-3 minutes to toast slightly
Rub the cut side of the garlic clove over the pitta bread bases
Spread the passata over the bread, add your toppings and the cheese
Bake in the oven for 10 minutes until the cheese is golden
My topping in the picture above: tuna, onion, tomato, capers, anchovies (0.5 syns for 28g on Original)

1/2 syn strawberry mousse


This amazig recipe serves 3 (1.5 syns in total or 0.5 syn per serving)
Ingredients :

  • 1 x mullerlight strawberry yoghurt
  • 250gm of natural yoghurt/fromais frais or quark
  • 1 x sachet of sugar free hartleys strawberry jelly
  • Method :
    make up the jelly sachet with only 60 ml of boiling water add the mullerlight yoghurt and 250gm of natural yoghurt/fromais frais or quark and whisk together. leave to set in fridge and after is is set top with fresh strawberries and sprinkle of sweetener.



Hi Slimmers, What I love about Slimming world is that we can eat as much as we want and still lose weight, there’s lots of foodrecipe and quick meals and this one is one of my favourite, it tastes absolutely amazing

Ingredients : 

pkt instant mash

2-3eggs,ff 3/4 of a 500g tubcottage cheese

cheese from healthy xtra seasoning

Method :

combine all ingredients until a pastry consistence i added a little water roll out to thickness desire cut into rounds and bake at 180 for 15-20 mins or until golden.

Amazing Diet Coke Chicken


This Amazing Diet Coke Chicken is delicious, easy to make and tastes just fabulous.
2 chicken breasts, cut into chunks
1 onion, diced
1 can diet coke
6 tbsp passata
Splash of Worcestershire sauce
Splash of soy sauce
1 tsp garlic granules
1 tsp chinese five spice
1 oxo cube
Quarter tsp chilli flakes (optional)
Any veg you like – I’ve used mushrooms, peppers and mangetout

In a large pan, fry the onion & chicken in frylite until the meat is sealed.
Mix the diet coke, passata, Worcestershire sauce, soy sauce, garlic, 5 spice and chilli flakes in a bowl, then pour over the chicken.
Sprinkle the oxo cube over the top and mix well.
Simmer for 30 minutes, then add your veg.
Continue to simmer until your veg is cooked, and the sauce thickens slightly.
Serve with cooked rice.
